Ice cream, meet Margarita

I have affirmed more than once, that if ever I was  stranded on a deserted island, and could only be left with one food, what would I choose?  My answer is unequivocally, ICE CREAM!  I can live without a lot of things, but ice cream is not one of them.

Besides, its loaded with calcium, which gracefully aging women need, right?

Cocktail ice cream!  This irresistible and unexpected union was introduced to me by my youngest daughter, Jadah, thanks Jadah!  It originated from Nigella Lawson’s recipe.  Her original version can be viewed on Nigella’s website, nigella.com.

When I made it, I moved my version to the top shelf.  Now it tastes just like my favorite top shelf Maggie (margarita) in ice cream form.  This recipe makes Joy a happy girl.  So, just for you, here’s my adaptation of the recipe:

 

Top Shelf, No Churn Margarita Ice Cream

Super simple and quick to make, even more simple to eat.  It would even be a great drink if you were interrupted while eating and it melted.

Ingredients:

  • ½ cup fresh squeezed lime juice, approximately 3 limes
  • 2 tablespoons of Silver Patron Tequila
  • 3 tablespoons of Grand Marnier
  • 1-¼ cups of powdered sugar *
  • 1 pint of heavy whipping cream

Method:

  • Pour the lime juice, Tequila and Grand Marnier into a mixing bowl, stir in the sugar to dissolve.
  • Add the cream and then softly whip until thick and smooth but not stiff.
  • Spoon this into an airtight container to freeze overnight, or at least until firm.  This ice cream does not need to be softened before serving.  Serve in a salt-rimmed margarita glass and garnish with a lime slice for a perfect cocktail ice cream.

Did you know you could easily make your own powdered sugar?  Just mix 1 cup of granulated sugar with 1 teaspoon of cornstarch in a blender and viola, 1 cup of powdered sugar.  Food science can be fun.

I am now personally motivated  to experiment with more cocktail ice creams, someone has to (smile).  I’m compiling my list…Pina Colada, Mai Tai, Screaming Banchee, White Russian…
